You can always have a traditional Thanksgiving and be healthy. Last year, I kept the classics but added a twist to each dish. Substitute ingredients or cook the dish differently, I did this with my Candies Yams. Everyone loved it and requested it seven times this year
The answer is self-control. When there are lots of delicious foods in front of you, it's so hard to resist them. You don't have to starve yourself or totally ignore the "unhealthy" foods. You can have them in little portions. A little bit won't hurt, right?
